This will probably be the best zucchini bread you've had in your life: it's super fluffy with the perfect crumb without being heavy with sugar and gluten. This is one of the few recipes that I use organic free-range eggs, making it not vegan, but it is still dairy-free (and soy-free and nut-free and gluten-free). It is also lightly sweetened with minimal maple syrup only and has a perfect crunch of toasted sesame seeds on top.
Each loaf serves 8
Ingredients: gluten-free flour (potato/tapioca/rice/sorghum), organic zucchini, organic oat milk, free-range eggs, pure maple syrup, organic coconut palm sugar, organic sesame seeds, olive oil, nutmeg, cinnamon, maple extract, pure vanilla extract, baking soda, sea salt.
